Den restlichen Teil mit einem Sparsch\u00e4ler abschaben, waschen und den Spargel 2 Minuten in reichlich kochendem Salzwasser (das Sie aufbewahren) blanchieren und abtropfen lassen. Die Enden von den Stangen trennen und die Enden l\u00e4ngs halbieren, die Stangen in Scheiben schneiden.<\/p>\n<p>Die gehackte Schalotte in der Pfanne bei schwacher Hitze 3\u20134 Minuten in der Butter anbraten und die Spargelstangen und -spitzen dazugeben.
